I wish my kids ate soup. In fact I wish they ate a lot of things.....uh, broccoli, tomatoes, anything that doesn't have cheese in it. Obviously you won't eat soup every day for a week...or maybe you can? For those of you that don't have picky eaters here are some easy crock pot soup recipes for you to enjoy!
Monday: Veggie-Beef Soup
3 lbs stew meat cut into squares (browned in oil)
4 taters cubed
4 carrots chopped
14 oz. diced tomatoes can
14 oz. crushed tomatoes (Italian)
2 med onions chopped
2 wedges cabbage sliced thinly
2 beef bouillon cubes
1 t. each garlic salt, salt, pepper and parsley
Combine all ingredients in slow cooker, cover with water. Cook on low for 8-10 hours.
Tuesday: Toscano Soup
2 med russet taters
1 lb spicy Italian sausage or sweet sausage (looks like a big hot dog)
5 1/2 cups chicken stock
2 cups chopped kale
1/2 c. cream or evaporated milk
Cook meat in skillet and then cut into slices 1/2 inch thick. Place cubed taters in crock pot. Stir in remaining ingredients except for cream. Cover and cook on low for 6-8 hours. 15 min before serving add cream and stir.
Wednesday: Chicken Tortilla Soup
4 chicken breast halves
2 15 oz. cans of black beans undrained
2 15 oz. cans of Mexican stewed tomatoes or Rotel
1 cup salsa
4 oz can of green chilies
14 1/2 oz. can of tomato sauce
Combine all ingredients in slow cooker (obviously not the chips and cheese!) cook on low for 8 hours. Just before serving remove chicken and shred, place back in crock pot. Serve with chips and cheese.
Thursday: Clam Chowder
2 12 oz. cans evaporated milk
1 milk can of water
2 6 oz. cans whole clams undrained
1 6 oz. can. minced clams, undrained
2 taters diced
2 T. cornstarch
1/4 c. water
Combine all ingredients except water and corn starch in crock pot and cook on low for 6-7 hours. 1 hr before cooking time ends mix water and corn starch together,when smooth stir into soup until it thickens. Salt and pepper to taste.
Friday: Take your wife out to dinner and order soup from the menu
