I have a little box with a bunch of hand written recipes that I have collected over the years from friends. I thought I'd share a few of my favorites with you.
Sherry's Chicken Tetrazzini (not so much low fat but amazingly yummy)
Sauce: 2 cans cream of chicken soup, 1 stick butter, 1 container sour cream, 1/4 cup Sherry (the wine, not the woman) 1 can sliced mushrooms
Pasta: 1 lb angel hair pasta cooked and drained, 3 lg chicken breasts cooked and cubed
Heat sauce ingredients together until smooth. Add to cooked pasta and chicken, placed in greased 9x13 pan and sprinkle with parm. cheese. Bake at 350 for 30 minutes.
Berkley's Southwest Chicken Pie
2 rolled pie crusts
3 large chicken breasts cooked and cubed
1 can black olives sliced
1 can black beans drained
1 can corn drained
1 cup salsa
1 t. garlic powder
1 c. uncooked rice
1 sm container sour cream
1 pkg shredded cheese
Place one pie crust in bottom of springform pan. Mix everything else together in a bowl, place in pie crust and then top with second crust. Bake at 400 for 30 minutes.
Mama's Shepard's pie (only I don't know who's mama it's from?!)
1 1lb ground beef
1 packet of gravy mix
1 16 oz frozen veggie medley
3/4 cup water
grated cheddar cheese
1 packet instant taters (about 4 cups)
3 t. diced onion
2 t. garlic powder
Make instant potatoes. Brown meat with garlic, onion and then drain. Add gravy mix. Add water and stir with low heat until thickened. Spray a 2 qt dish with pam, layer meat, pats of butter,veggies, taters and cheese...repeat. Bake at 375 for 45 minutes.
